Portland Personal Trainer Peter Fuller's Mom's Mango Salad

This refreshing, sweet, cool, tangy,and spicy if you dare. It's summer time and hot in the Portland, Oregon.Prep time: 20 mins Serves 3-5 salad1-2 cloves garlic1 table spoon maple syrup2 table spoon cashews4 cherry tomatoes1 tablespoon fish sauceJuice 1 lime1 table spoon garlic-infused vinegar3 mangoes2 avocadosCilantro to garnish* 3 small Thai chilies(substitute 1/2 red bell pepper for chilis)Using a mortar and pestle, mash together the chilies and garlic until they start to make a paste.Add the maple syrup and cashews to the above mixture and continue to mash together until the nuts are broken down.Add the fish sauce, lime juice, and vinegar to the mixture.
